Spring vegetables are at their peak, and nothing shows off their natural shape and color quite like a rustic galette.
Using frozen puff pastry allows you to focus on layering asparagus and marinated artichokes over a tangy, herbed cream cheese base.
The pastry puffs to golden perfection, while the vegetables stay tender and vibrant. A quick toss of lemony arugula before serving adds brightness and casual elegance. This galette works beautifully as a main course or as part of a seasonal spread.
Ingredients
Pastry and Filling:
1. 1 sheet frozen puff pastry, thawed (14–17 oz.)
2. 3 garlic cloves, finely grated
3. 8 oz. cream cheese, room temperature
4. 2 oz. Pecorino Romano or Parmesan, finely grated (about 1 cup)
5. ½ tsp. freshly ground pepper, plus more
6. 2 large eggs, beaten to blend
7. 1 jar (12–14 oz.) oil-marinated quartered artichoke hearts, drained
8. 8 oz. asparagus, trimmed, halved lengthwise if thick, cut into 2" pieces
9. 3 oz. baby arugula (about 3 cups)
10. 2 Tbsp. extra-virgin olive oil
11. 2 Tbsp. red vinegar
12. Flaky sea salt
Step-by-Step Preparation
1. Prep the Pastry
Preheat oven to 400°. Roll out pastry into a 16x12" rectangle (or ⅛" thick for a single sheet). Lightly score a 1" border along the edges to mark where it will fold. Use a fork to make small holes across the surface inside the border. Chill on a parchment-lined baking sheet.
2. Make the Cheese Base
Combine grated garlic, cream cheese, Pecorino Romano, and pepper. Mix in one beaten egg and set aside.
3. Prepare Vegetables
Toss artichokes and asparagus in their marinade to coat.
4. Assemble the Galette
Spread cheese mixture over pastry, leaving a border. Layer asparagus and artichokes on top. Fold edges over filling along the scored border and brush exposed pastry with remaining beaten egg.
5. Bake
Bake 40–45 minutes until pastry is puffed and deep golden brown. Let cool 10 minutes.
6. Finish with Arugula Salad
Toss arugula with olive oil, red vinegar, flaky sea salt, and pepper. Place salad over galette just before serving.
